Chow Mein

So.. who has tried to make homemade Chinese noodles and its been soggy amd rubbish? I know how frustrating it is when things don’t turn out right. This chow mein however, is super easy.. and if you have teens, it’s a great one to teach them.

Also onions are in season through he summer so it’s a great way to use them up.

Firstly you need to get yourself to a chinese supermarket and get some egg noodles or rice noodles.. they do the best ones.

Ingredients: feeds 2

4 nests of noodles

Left over cooked chicken (thigh is best)

2 sliced garlic cloves

1 inch matchstick finely chopped ginger

1-2 spring onions

1/2 bag beans sprouts

1 tsp Sesame seeds

Sauce:

1 tbsp sesame oil

1 tbsp rice wine vinegar

2 tbsp Soy

2 tbsp oyster sauce

1 tsp siracha (optional)

Method:

  • In a bowl, pop in the noodles and cover with boiling water. Using a fork, break up the noodles and after about 1 minute, drain and rinse well.
  • Make the sauce by adding all the ingredients together and mix together.
  • Now, in a frying pan add 1 tbsp olive oil and fry off the cooked chicken until starting to go brown.
  • Slice the onion and add the white bit (save the green bits for the end). Add in the garlic and ginger as well.Keep moving the ingredients in the pan so nothing sticks.
  • Now add the noodles followed by the sauce and mix well with the noodles and other ingredients.
  • Turn off the heat and add the green parts of the onion, a big handful of bean sprouts and toss together.

Plate up and sprinkle with sesame.
