Chorizo crumb topped baked Cod Traybake
This gorgeous mis-week meal is a great way of using up seasonal veggies sat in the fridge when there’s not enough of one thing. If like me there is often a small end piece of the chorizo left in the fridge then these breadcrumbs that I will explain how to make keep in the fridge for up to a week and is amazing as a topper for fish or meat or sprinkled over a salad.
Ingredients:
Stale bread – 1-3 slices
Chorizo 5cm or so
Cod fillet – 4 pieces
2 onions – cut into quarters
Handful tomatoes – halved
5/6 New potatoes – cut into quarters
2 large carrots – chopped into chunks
4 roasted peppers – from a jar cut into quarters
2 cloves garlic whole
Olive oil
Seasoning
Parmesan optional
Method:
First make the chorizo crumb. You will need a blender/food processor. First take your chorizo and cut into slices. Using a dry frying pan on a medium-high heat, place the chorizo in and cook for 2mins on each side. PLace onto some kitchen paper to drain and cool. Now take the bread and cut into 1-2cm chunks. Take the same frying pan place your bread into it and back onto a medium-high heat. Toast the bread gently but down allow to burn. Remove from the heat and then put both into a food processor and pulse into breadcrumbs. Allow to cool and pop into an air tight container until you are ready to use.
For the traybake place the oven onto 200 fan and chop up your veggies. Take a deep roasting tin and place all the vegetables in with the garlic and 1 tbsp Olive oil; season well. Put into the oven for 15mins. Meanwhile take your cod pieces and season both sides. Take the chorizo crumb and heap a couple of tbsp onto the fish. A little grating of parmesan too if you like but not essential. After 15 minutes of roasting the vegetables, remove the pan from the oven and place the cod fillets directly on top of the vegetables, leaving enough space between the four fillets. Turn the oven down to 180 and pop back in the oven for another 12-15 minutes depending on how thick the cod pieces are.
Serve immediately and enjoy. Add a mixed salad if you like too
