Banana Bread

Some days are just dreary, the weather is still, heavy and dank. The week feels monotonous and the inside mood is tired and slow. When this mindset creeps in I always bake! A good cheerful cake always helps. This mega easy banana bread loaf gets those forgotten and ‘left in the bowl’ brown bananas used up and creates a firm mood lifter to mosey up with on the sofa. Its also fab as a mood lifter for after the school run and everyone is starving!

Ingredients: Oven on to 175 degrees

2-3 ripe bananas mashed (use 3 if they are small)

45g Melted butter of choice

1tsp baking powder

1tsp Vanilla Extract

70g Caster Sugar

1 large egg beaten

190g Flour

125g Dark chocolate chips (or chopped chocolate)

This Recipe can be done by hand – no mixer needed so it is easier for little hands if the children are helping – or if like my boys they are students and mixer is available!

Method:

Mash up your bananas into a bowl and pour in the melted butter mixing it in well. Next pouring the vanilla, sugar, beaten egg and flour. Mix to combine before folding in the chocolate chips. Tip the mixture into a loaf tin and sprinkle a few extra chocolate chips on top. Bake in the oven for about 50 mins, or until the knife comes out clean. 

Allow to fully cool in the tin before removing and serving.

Top tip – if the sponge gets a bit dry abetter a few days warm up in the microwave and eat a s pudding with custard!!
