Brunch Pakoras

Ingredients:

  • 2 Eggs
  • 1 ripe avocado
  • 1 bunch coriander
  • 1 lime
  • 1/2 galric clove grated
  • 1-2 chilli red/green
  • 1/2 onion diced
  • 1 carrot grated
  • handful mushrooms chopped
  • 1/2 leek sliced
  • 1/2 tsp ground Cumin
  • 1 tsp Zatar
  • 1 handful fresh spinach or lambs lettuce to serve
  • Good qaulity Olive oil

Method:

Make the guacamole by mashing the avocado into a bowl. Finely diced and add in half a red chilli, along with grating in half a garlic clove. Roughly chop some fresh coriander and add this into the bowl. Season with salt and a good squeeze of fresh lime juice. Mix well and set aside until ready to plate up.

To make my spiced pakora style fritters, chop all the seasonal veg you want to use and add to a bowl with the ground cumin and zatar spices. Season with salt and crack 2 eggs into the bowl. Whisk to combine. Now in a frying pan add 1-2 tbsp good quality olive oil and allow the pan to heat up. When hot spoon half the mixture in. Fry on both sides for 1 minute. Repeat the process until the mixture is all used.

Take a plate and add some seasonal greens. In spring I like to use spinach or lambs lettuce. Add a good amount of guacamole and top with your pakoras.

This a great easy recipe to enjoy anytime of the year. Just swap out the vegetables for others. courgette, kale, grate squash, beetroot, all work well. enjoy!
