Ingredients:
- 1 pork fillet
- 1 heaped tsp paprika
- 2 heaped tsp ras el hanout
- 1/2 tsp dried rosemary/1 bay leaf
- 1 tsp salt
- 2 tbsp Extra virgin olive oil
- 2 onions
- 3 garlic cloves
- In a roasting dish add all the spices along with the garlic cloves crushed.
- Next roll the pork fillet into the spice mix as a dry rub.
- Peel, chop, and quarter the onions. Add these into the ovenproof dish.
- Drizzle over the olive oil and cover with foil.
- Marinate in the fridge overnight or leave out on the side until ready to cook.
- In a hot oven of 200 add the covered pork and cook for 10 minutes. Then reduce the heat to 160, uncover and cook for a further 15-20 minutes.
- Allow the pork to rest for 10 minutes before serving with a seasonal herby slaw or salad.
