The perfect recipe for a bbq – or if you are enduring a wet English summer – also very oven friendly too!!

Ingredients:

2kg short pork ribs

Dry rub:

2 tsp smoked paprika

1 tsp cumin

1 tsp brown sugar

1 tsp oregano

1 tsp cayenne pepper

1 tsp salt

Method:

Make the rub by mixing all the ingredients together. Pat dry the pork ribs and at room temperature sprinkle the rub all over the pork. Using your hands, ensure the rub is well coated over each rib. Allow to sit in the rub until you are ready to cook. If using the oven, put the oven onto 150. Line an oven tray with foil and place the ribs in. leaving the ribs uncovered, put into the oven for 30minutes. Then remove and cover with foil tightly before replacing the tray back into the oven at 140 for 2.5 hrs. When cooked allow to rest before serving with a summer salad.

If barbecuing, add on to thot coals to begin with, then move out to indirect heat and cook slowly until soft and falling off the bone.

Rice, roasted veg, steamed greens, salad, couscous etc.. all go super well with ribs.
