My spanish cod with smokey pepper sauce is just delicious! Looks and tastes like you have spent hours in the kitchen.. when it only take 20 minutes… the hardest part is chopping! It’s also budget friendly by using a mix of seasonal and store cupboard ingredients; this dish doesn’t break the bank. Give it a go and warm up the week.
Serves 3 ( double recipe if serving more)
Ingredients
300g Cod fillet
2 red peppers sliced
1 red onion sliced
40g chorizo diced
1 large garlic clove grated
1 tin chopped tomatoes
2 tsp paprika
1 tsp oregano
1 tin butter beans
400ml water
Seasoning
Fresh or dried parsley
Method
Take a large sautè pan and add 1 tbsp olive oil on a medium heat. Slice and add the onions. This is the most patient part! Let the onions soften properly. About 6 minutes. Then add the garlic, peppers and chorizo. Allow to cook 2-3 minutes before adding the paprika, oregano and tinned tomatoes. Season and add in the water. Allow all this to bubble away and reduce for a few mintues. Season the cod and nestle them onto the sauce. Now drain and rinse the butter beans and pour over. Turn the heat down to a simmer and allow to cook for 6-8 mintues. Serve with fresh parsley and another pinchnof oregano. This can ben enjoyed as it is, or with a chunk of sourdough bread to dip in!
If you want to get more iron and magnesium in, then wilt through some Autumn kale or spinach.
If you want to impress freinds, then double the recipe and serve this dish in the centre of the table and let everyone dig in!
